Festive Finger Food: Ways to Utilize Christmas Leftovers into NYE Appetizers
What kinds of bite-sized appetizers can I whip up for New Year’s Eve using my Christmas leftovers that will still seem festive?
Party snacks needn't be fancy, so New Year's offers a great chance to clear the decks. The main guideline is to stick to items to just one bite—guests don't want to handle a fork. People just want a big hug of comfort food with a luxurious touch.
If you have a bit of smoked salmon left, place it on mini pancakes and crown it with affordable roe. Mini fishcakes are also an ideal choice: Whether you've got leftover smoked haddock or hot smoked salmon, fold it through mashed potato, blend with dill, lemon, and caramelized onions, then coat in panko and fry until golden.
You could also have a ball with Spanish croquettes. Make the bechamel up to days ahead, then use remaining pork, chicken, or mushrooms for the interior. Whizz old bread into crumbs to cover them, then fry. Sausage roll fillings are another natural home for those breadcrumbs, or use them as a coating for bite-sized chicken. Seasoning-wise, just add a bit of citrus zest and aromatic herbs, and they'll sing so much more. Incidentally, buttery pastries make superb crumbs, too.
One beloved treat at this time of year is a post-holiday sandwich, and that can continue after Boxing Day. Get some holiday meats in an sealed tub and store in the freezer. While you're at it, reserve some berry relish and sweet glaze in the fridge. When needed, defrost the meat, then pop it in a preheated oven with the reserved glaze for a short time. Let it cool and cut into thin pieces, then lay on top of some artisan bread and start building sandwiches with lots of cranberry sauce. Slice into small squares for a winner.
Remaining poultry, meanwhile, could be turned into a spicy, crisp salad. There’s always a bit of turkey leg left over, and it's perfect for something full of flavour. Shred the meat, then fry it slowly in a pan, and mix with leftover cranberry sauce thinned with lime juice, a spoonful of soy and a little spicy oil. Finish with chopped herbs and some green onions, and present in small lettuce cups.
Transforming Leftover Vegetables
Veg, meanwhile, can be scrubbed up and fit for a party with a big batch of fried potato cake. Mix all your leftover veg with fresh herbs, then season and incorporate a binding agent. Cut out portions to about the size of blinis, then store in the icebox. Refresh in a preheated oven for a short time and finish with whatever you like—perhaps sliced beef and grated horseradish. A good tip, though: set some aside for brunch the next day.
